Kiran Patnam, the executive sous chef at the Baltimore Marriott Waterfront hotel got the chance to “Beat Bobby Flay” and we were thrilled to be a part of the staff viewing and celebration! For those unfamiliar, “Beat Bobby Flay” is a popular Food Network show where local chef’s go head-to-head with the well-known Bobby Flay. Kiran, also known now as the “Indian Spice Master” has been mastering his cooking skills since he was a young boy in India. Chef Patnam is fond of this clever nickname. He says in an interview with Marriott TRAVELER,
“I love it because I grew up eating spices, using spices in my cooking. My secret weapon when it comes to Indian food is garam masala, which is a blend of spices. I also use a lot of cumin, coriander and turmeric. It’s just perfect for me that the Food Network tells me I’m a spice master — I’ll take it!”
Not only did Kiran beat Bobby Flay, but the recipes he used to win can now be found on the Apropoe’s menu (the restaurant within the Baltimore Marriott Waterfront). Make sure to stop by and try them out!
Kiran also goes on to say what his future plans hold..
“First, we are going to launch a new menu [at Apropoe’s] after the show airs. We are going to add the competition dishes to the menu so we can share them. Next, we are trying to take this restaurant to reach more people in Baltimore and to constantly change the menus based on the season and use local ingredients and produce as much as possible.”
